Elderflower syrup with Meli honey

Step 1
Pick about 30 elderflowers, ensuring they are in full bloom. Do not wash them, as the pollen is what gives the syrup its flavor. Check for any bugs.
TIP: Pick flowers from higher branches, away from roads with heavy traffic.

Slice the lemons.
Step 3
Fill a pot with the elderflowers, water, and lemon slices. Make sure the flowers and lemons are submerged. Let it sit for 24 hours, covered, in a sunny spot.
Step 4
Strain the mixture, pressing the flowers to extract all the liquid. Optionally, strain again through a cloth.
Step 5
Add the Meli solid honey and gently heat the mixture (without boiling) until the honey dissolves.
Step 6
Pour the syrup into glass bottles and let it cool. You can add a splash of this syrup to a glass of water.
