Bruschetta with ricotta, roasted grapes, and Meli acacia honey

Peel the grapefruit and cut the segments. Squeeze out a bit of juice.
Mix the ricotta with finely chopped chives, thyme, grapefruit juice, liquid Meli honey, pepper, and salt.
Cut the Meli honey cake into small squares and spread them with the ricotta mixture. Place a grapefruit segment and a slice of duck breast fillet on each piece of Meli honey cake. Garnish with watercress and drizzle with some honey.
