Separate the eggs. Beat the yolks with liquid Meli honey until airy.
Add mascarpone and mix well.
Beat the egg whites in a separate bowl until stiff peaks form.
Gently fold the mascarpone mixture into the egg whites. Take your time!
Dip the Meli honey cake in coffee and place in a dish. Cover with the mascarpone mixture and repeat.
Let it rest in the fridge overnight. Sprinkle with cocoa powder before serving.
