Vanilla ice cream with caramelized apples and Meli honey cake

Instructions
Step 1
Soak the raisins in amaretto, rum, or water.
Step 2
Toast the almond flakes in a dry pan until golden brown. Stir regularly to prevent burning.
Step 3
Cut the apples into wedges.
Step 4
Melt the butter in a pan over medium heat and cook the apple wedges until they begin to soften. Sprinkle with brown sugar and add the Meli honey. Let it caramelize gently.
Step 5
Add the soaked raisins (including the liquid), cinnamon, and star anise. Let everything simmer briefly, then remove the apples and sauce from the pan.
Step 6
Cut the Meli honey cake into smaller pieces (e.g., diagonally in half). Toast the honey cake in the same pan over high heat until it becomes slightly crispy.
Step 7
Place a slice of honey cake on each plate. Add some caramelized apples and top with a scoop of vanilla ice cream.
Step 8
Finish with the raisins, toasted almond flakes, and a drizzle of the remaining sauce. Garnish with a mint leaf and serve immediately.
