Banana pancakes with Meli honey

Mix the buckwheat flour with the eggs and buttermilk in a large bowl.
If you have time, let the batter rest for 1-2 hours.
Meanwhile, prepare the ricotta topping. Mix the ricotta with honey and add the juice of the lemon.
Heat oil in a pan until it is very hot.
Pour a ladle of batter into the pan and swirl to coat the bottom.
Lower the heat and cook until the underside turns golden brown, then flip.
