Fresh carrot salad with couscous and Meli honey dressing

In a large bowl, whisk the flour, milk, and egg until smooth.
Add the liquid honey and lemon zest to the batter and mix well.
Heat a bit of butter or oil in a frying pan over medium heat.
Pour some batter into the pan and cook the pancakes until golden brown on the bottom and bubbles appear on the surface. Flip and cook the other side until golden brown.
Drizzle some more honey over the warm pancakes and serve them optionally with fresh fruit for extra flavour.
